Banankage med blåbær / banana cake with blueberries

Synes du der er alt for koldt udenfor? og har du allermest lyst til at sidde indenfor under et tæppe med lidt kage? Hvis ja, så giver jeg dig opskriften så du kan gøre det med god samvittighed 🙂

INGREDIENSER:

  • 2 bananer
  • 100g dadler
  • 2 æg
  • 30g kokosmel
  • 1 tsk kokosolie
  • 1 tsk bagepulver
  • 50g blåbær

FREMGANGSMÅDE:

  • Mos dadlerne (Jeg plejer at bruge en gaffel – selvom det taget lidt tid)
  • Pisk æggehvider stive
  • Pisk dadler, blommer, bananer, kokosmel, smeltet kokosolie og bagepulver sammen
  • Vend æggehviderne i resten af dejen
  • Hæld dejen over i små tærteforme (Eller en stor)
  • Pynt med blåbær på toppen inden du kommer den i ovnen
  • Bages ved 200 grader i ca. 20 minutter
  • Den er bedst når den er nybagt

ENGLISH:

Do you think it’s too cold outside? and do you just wanna sit inside under a blanket and have some cake? If yes, then I give you the recipe so you can do it and have a good conscience 🙂

INGREDIENTS:

  • 2 bananas
  • 100g dates
  • 2 eggs
  • 30g desiccated coconut
  • 1 teaspoon coconut oil
  • 1 teaspoon baking powder
  • 50g blueberries

PROCEDURE:

  • Mash the dates (I usually use a fork – although it take some time)
  • Beat egg whites stiff
  • Beat dates, plums, bananas, coconut, melted coconut oil and baking soda together
  • Mix the egg whites with the rest of the dough carefully
  • Pour the batter into small tart molds (or a large one)
  • Garnish with blueberries before you put the cake in the oven
  • Bake at 200 degrees for about 20 minutes
  • It is best when it’s newly baked
