Guldkarameller / Gold Toffees

guldkarameller1Som lovet på Instagram, kommer her opskriften på en sundere udgave af Guldkarameller. De er simpelthen virkelig gode, så blev nød til at ligge dem på Instagram inden jeg kunne dele opskriften med dig:) Men her kommer den.

Jeg hyggede mig fredag aften med at lave guldkarameller og de blev en kæmpe succes. Guldkarameller minder mig om min Bedstemor, for hun havde altid Guldkarameller, så når man var på besøg fik man altid et par stykker eller 5. Så det var bestemt hyggeligt at lave Guldkarameller, da de bragte dejlige barndomsminder frem.

Nedenfor kommer opskriften og håber du bliver ligeså glad for dem som mig:)

INGREDIENSER: (ca. 20-25 stk)

100g bløde dadler
55g 70% chokolade
1/2 tsk kokosolie
1 lille knivspids salt
1 tsk mascarpone (uden top)

FREMGANGSMÅDE:

  • Mos dadler grundrigt med en gaffel (Det er vigtigt at du bruger friske og bløde dadler)
  • Smelt 25g af chokoladen med kokosolien over et vandbad
  • Bland smeltet chokolade, kokosolie, mascarpone, salt og dadler godt med en gaffel
  • Stil på køl i 1/2 time
  • Tril 20-25 kugler
  • Smelt resten af chokoladen over vandbad og overtræk kuglerne med chokolade
  • Stil de færdige kugler i fryseren. De er bedst når de har stået der en times tid inden de serveres
  • Opbevar Guldkaramellerne i fryseren. De kan spises direkte herfra.

As promised on Instagram I now give you the recipe for a healthier version of Gold Toffees. They are simply so good, so I had to put them on Instagram before I could share the recipe with you 🙂 But here it comes.

Friday night I enjoyed myself and made Gold Toffees and they were a huge success. Gold Toffees reminds me of my grandmother, because she always had Gold Toffees. When we were visiting we always had a few or 5 of them. So it was definitely nice to make Gold Toffees because they brought back nice childhood memories.

Here comes the recipe and I hope you will enjoy them as much as me:)

INGREDIENTS: (about 20-25 pieces)

100g soft dates
55g 70% chocolate
1/2 teaspoon coconut oil
1 small pinch of salt
1 teaspoons mascarpone (without top)

PROCEDURE:

  • Mash the dates with a fork (It is important that you use fresh and soft dates)
  • Melt 25g of the chocolate with coconut oil over a water bath
  • Mix the melted chocolate, coconut oil, mascarpone, salt and dates well with a fork
  • Store in the refrigerate for 1/2 hour
  • Roll out 20-25 balls
  • Melt the rest of the chocolate over a water bath and cower the balls with chocolate
  • Put the finished Gold Toffees in the freezer. They are best served after being frozen for an hour
  • Store the Gold Toffees in the freezer. They can be eaten directly from here.
