Jordbær mandelsmåkager / Strawberry almond cookies

jorbaer-mandelsma%cc%8akager1Jeg har i dag lørdag brugt hele dagen på at se den flotteste “dias de Muertos” optog gennem Mexico City. Der var mennesker over alt, så tror i morgen skal være mere stille og rolig. Jeg skal fx lave disse Jordbær mandelsmåkager som bare er vildt lækre med den søde jordbær i midten. Jeg deler opskriften med dig, så kan du selv prøve at lave dem derhjemme:)

INGREDIENSER: (ca. 12 stk)

75g mandelmel
1 æg
1 tsk sukrin
1 tsk kokosolie
1 tsk flydende vanille

Fyld: 25g Sukkerfri jordbærsyltetøj eller jordbær du du selv har kogt og sødet med Sukrin.

FREMGANGSMÅDE:

  • Blend mandelmel, æg, Sukrin, kokosolie og vanille sammen
  • Stil dejen på køl i en time (Så er den nemmere at arbejde med)
  • Rul dejen ud i 12 kugler og tryk dem lidt flade.
  • Lav en lille fordybning i midten og fyld det med jordbærsyltetøj
  • Bag ved 200 grader i ca. 10-15 minutter

I have spent the entire day today watching the beautiful “dias de Muertos” parade through Mexico City. There were people everywhere, so I think tomorrow should be more quiet and calm. For example i’m gonna make these strawberry almond cookies: They are crazy delicious with the sweet strawberry in the middle. I am sharing the recipe with you so you can try and make them at home 🙂

Ingredients: (about 12 pieces)

75g almond flour
1 egg
1 teaspoon sukrin
1 teaspoon coconut oil
1 teaspoon liquid vanilla

Filling: 25g sugar free strawberry jam or strawberry that you have cooked and sweetened with Sukrin.

PROCEDURE:

  • Blend almond flour, eggs, Sukrin, coconut and vanilla together
  • Set the dough in the fridge for an hour (Then it’s easier to work with)
  • Roll out the dough into 12 balls and press them a little flat.
  • Make a small hole in the center and fill it with strawberry jam
  • Bake at 200 degrees for about 10-15 minutes
