Squash pizza med mozzarella og serano skinke / Zucchini pizza with mozzarella and serano ham

squash-pizza1Jeg har prøvet mange sunde pizzaer med forskellige bunde og må indrømme en af mine favoritter er lavet med squashbund. Giver du den tid nok i ovnen, kan den blive ekstra sprød i kanterne – mums.

INGREDIENSER: (1-2 personer)

Pizza bund:
400g squash
1 spsk parmesan
2 æg
1/2 tsk salt og lidt friskkværnet peber

Pizza fyld:
Tomatpure (1 dåse ca. 140g)
1 pakke mozzarella
oregano
100g serano skinke
1 rød peber

FREMGANGSMÅDE:

  • Riv squash groft på et rivejern
  • Hæld den revne squash ud på et viskestykke og pres så meget vand som muligt ud af squashen (MEGET VIGTIGT HVIS DEN SKAL BLIVE SPRØD)
  • Bland herefter squash og de andre ingredienser til pizza bunden sammen
  • Hæld squashen ud på en bageplade med bagepapir
  • Bages ved 190 grader celcius i ca. 1/2 time eller til den er gylden
  • Herefter tages pizzaen ud og der puttes tomatpure, oregano og skiver af mozzarella på pizzaen
  • Bag yderligere 10-15 minutter (Til mozzarellaen er gylden)
  • Pynt med serano skinke og rød peber

I’ve tried many healthy pizzas with different bases and I have to admit that one of my favorites are made with squash. If you give it enough time in the oven, the pizza will be extra crispy  – yummy.

INGREDIENTS: (1-2 people)

Pizza base:
400g zucchini
1 tablespoon parmesan
2 eggs
1/2 teaspoon salt and a little freshly ground pepper

Pizza stuffing:
Tomato paste (1 box about 140g)
1 pack of mozzarella
oregano
100g serano ham
1 red pepper

PROCEDURE:

  • Grate zucchini coarsely with a grater
  • Pour the grated squash out on a tea towel and squeeze as much water as possible out of the squash (VERY IMPORTANT IF YOU WANT IT TO BE CRISPY)
  • Mix squash and the other ingredients for the pizza base together
  • Pour out the squash on a baking sheet with baking paper
  • Bake at 190 degrees celcius for about 1/2 hour or until golden
  • Then take the pizza out and put tomato paste, oregano and slices of mozzarella on the pizza
  • Bake another 10-15 minutes (Until the mozzarella is golden)
  • Garnish with serano ham and red pepper
